Muffin Instructions: you'll need: 1 bag Kodiak mix, 2 eggs, 1 cup milk of choice, 1/3 cup oil. Preheat oven to 350 degrees f. Combine ingredients in a mixing bowl and hand stir until blended. Divide batter among 12 cups in a lined or greased standard muffin pan. Bake for 12-15 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from the pan. Makes 12 standard muffins. Quick Bread: You'll need: 1 bag Kodiak mix; 3 eggs; 1 cup milk of choice; 1/3 cup oil. Preheat oven to 350 degrees f. Combine ingredients in a mixing bowl and hand stir until blended. Add batter to a greased and lined 8x4 inch loaf pan. Bake for 45-50 minutes. Let cool completely before cutting. Optional Add Ins: You'll need: 1 ripe banana, mashed 1/2 cup walnuts, chopped 1/2 cup chocolate chips. For high-altitude baking (+3,000ft), increase oven temperature by 25 degrees F.
