Buttermilk Mashed Potatoes with Chives

Instructions

  • STEP 1

    Peel garlic.

    • 6 cloves garlic
  • STEP 2

    Fill a large pot about halfway with hot water (from the tap); add garlic cloves, cover with a lid, and bring to a boil over high heat.

  • STEP 3

    Meanwhile, wash, dry, peel, and cut potatoes into 1-inch cubes. Once the water is boiling, add potatoes to the pot and return to a boil; cook until potatoes are very tender, about 10 minutes.

    When the potatoes are done, drain in a colander and return to the pot. Add buttermilk, butter, and spices; mash until smooth and creamy. (Alternatively, you can place these ingredients in the bowl of a stand mixer with a paddle attachment; mix on medium-low speed until smooth and creamy, 1-2 minutes.)

    • 3/4 cup buttermilk
    • 3 tbsp butter, unsalted
    • 1 tsp salt
    • 3/4 tsp onion powder
    • 1/4 tsp black pepper
  • STEP 5

    Taste and adjust seasoning by adding up to ¼-cup additional buttermilk (as needed) and/or increasing the spices to taste. Note: the addition of more buttermilk will increase both the creaminess and the tanginess of the mashed potatoes. If you would like to add creaminess to your potatoes without increasing the tanginess, you can add up to ¼-cup milk or cream in its place.

    • 1/4 cup buttermilk

    Wash, dry, and chop chives into small pieces.
